Chili and Carrot Pickle

Welcome to my very first blog!  I love to cook all types of food and enjoy sharing my recipes, so hopefully you will like them too!

My grandmother always makes this absolutely delicious and simple to make indian chili and carrot pickle.  I especially love this spicy accompaniment during winter months!




Ingredients
5 to 6 oz green chilies
2 carrots
2 tbsp lemon juice
3 tbsp vegetable or canola oil
1 tsp turmeric
1 tsp split mustard seeds
1 to 1 1/2 tsp salt
This accompaniment needs to be prepared a day or two in advance.  Use additional carrots and fewer chilies if you prefer a milder taste.  This is possibly the simplest pickle that can be made.

  1. Slice the chilies in half, length ways and then into smaller pieces of approximately 1”
  2. Slice the carrots into pieces of the same size as the chilies
  3. Combine all ingredients and mix
  4. Store in the refrigerator overnight to allow all the flavors to infuse into the chilies and carrots
  5. Serve as an accompaniment to any indian meal, this pickle can be kept in the refrigerator for about 1 or 2 weeks
