My grandmother always makes this absolutely delicious and simple to make indian chili and carrot pickle. I especially love this spicy accompaniment during winter months!
Ingredients
5 to 6 oz green chilies
2 carrots
3 tbsp vegetable or canola oil
1 tsp turmeric
1 tsp split mustard seeds
1 to 1 1/2 tsp salt
This accompaniment needs to be prepared a day or two in advance. Use additional carrots and fewer chilies if you prefer a milder taste. This is possibly the simplest pickle that can be made.
- Slice the chilies in half, length ways and then into smaller pieces of approximately 1”
- Slice the carrots into pieces of the same size as the chilies
- Combine all ingredients and mix
- Store in the refrigerator overnight to allow all the flavors to infuse into the chilies and carrots
- Serve as an accompaniment to any indian meal, this pickle can be kept in the refrigerator for about 1 or 2 weeks
